Smoked Pit Beans
Ingredients
• 4 slices thick-cut streaky bacon (optional)
• 1 medium yellow onion, diced
• 2 jalapeños, chopped
• 3 cans of kidney or cannellini beans (with liquid)
• 3/4 cup barbecue sauce
• 1/2 cup dark brown sugar
• 1/4 cup apple cider vinegar
• 2 tablespoons Dijon mustard

• 2 tablespoons molasses
Method
Prepare Beans: Pour the beans (liquid and all) into a pan.
Add Ingredients: Add the bacon (if using), diced onion, jalapeños, barbecue sauce, brown sugar, apple cider vinegar, Dijon mustard, and molasses.
Mix: Stir everything together until well combined.
Smoke: Place the pan in the smoker, uncovered. Smoke for about 3 hours, or until the bacon has rendered its fat and the beans have thickened.
Serve: Remove from the smoker and serve while warm!
